用途: 脂肪氧化酶可催化分子氧,对具有戊二希1,4双键的油脂发生氧化,形成氢过氧化物。氢过氧化物氧化蛋白质分子的巯基(-SH)形成二硫键(-S-S-)并能诱导蛋白质分子聚合,使蛋白质分子变得更大。脂肪氧化酶可通过偶合反映破坏胡萝卜的双键结构,从而起到漂白、改善色泽的作用
