作用机理:风味酶可使水解液形成独特的风味和减少水解造成的苦味,其原理为通过内切蛋白酶切断多肽内部的肽键,形成短链肽,其中一些含有疏水氨基酸,因而成为苦肽,使用外切酶每一次从多肽链的末端切断释放一个氨基酸,从而把苦肽彻底降解为氨基酸。 蛋白水解液的特性由水解程度及生成的肽的结构所决定,而这又是依赖于蛋白质的本性、所使用的酶的特性、以及水解条件,特别是pH和温度。
